Recipe: Protein Packed Peppers


I know I posted a stuffed pepper recipe before but this one is a bit different and a BIT tastier. :) 

What You'll Need:
5 bell peppers 
1 diced onion
1.25 pound ground turkey
1/2 can black beans
1/2 can whole kernel corn
1/4 cup tomato sauce
1/2 packet of low sodium taco sauce
2 tablespoons of olive oil
a few slices of your fav cheese (I used a block of cheese and cut off chunks)

1. Brown your ground turkey with the onion and taco seasoning

2. Cut the tops/sides (depending on how awkward your peppers are, cut so it will lay in the pan the best) off and gut the inside (save the tops!), rinse out remaining seeds, cut a small X anywhere on your pepper (don't penetrate to the other side) and then let it dry upside down on cutting board

3. Drain your black beans and corn, add to the ground turkey. Mix while it cooks. Add tomato sauce, mix again

4. Brush your peppers (inside AND out) with olive oil, preheat oven to 350 and barely cover the bottom of your pan with water

5. Stuff each pepper halfway with the mixture, add cheese, finish stuffing, and top with more cheese. Replace the tops (this creates sort of an oven within an oven for your peppers, I promise you the result is amazing.) and let it cook for 45 minutes and then DIG IN!
