Recipe: Clean Eating Macaroni Salad


I am seriously obsessed with summer salads. (Broccoli salad, potato salad, macaroni salad, spaghetti salad) However, I am NOT obsessed with all the calories it comes with, not to mention its SO good you cant have just ONE small serving so you are essentially hurting your waistline even more! I stumbled across this recipe but altered it a bit and it honestly tastes the EXACT same as the original (at least my Mom's original anyways!)




What you'll need:
3 cups whole wheat macaroni
Peas (I honestly didnt have any on hand but had a bag of frozen veggie medley and separated peas from that,        just eye out how many you'd like in your salad)
1 celery stalk, diced
1 small onion, diced
1 tbsp red wine vinegar
2 tbsp miracle whip
1/2 cup plain nonfat yogurt
1 can tuna in water drained
Salt and Pepper


1. Bring water to a boil and add macaroni, while the water is heating/macaroni is cooking dice your veggies and open and drain tuna

2. Cook macaroni until al dente and strain then add to a large bowl, let it cool for about an hour

3. Add chopped veggies, peas, tuna, miracle whip, yogurt, and vinegar and mix VERY well, add salt and pepper to taste and place bowl in refrigerator and soon you'll have a cold and delicious (guilt free!) salad to enjoy!
